Cedar Crest College

 

Founded in 1867, Cedar Crest College serves as a small private liberal arts women's college in Allentown.  Cedar Crest provides a variety of academic programs, but the college has a particulary strong curriculum in the biology and pre-medical fields.

 

For students interested in environmental studies, Cedar Crest College offers a B.S. degree in Biodiversity & Conservation Biology.  The undergraduate program includes a field-based curriculm that focuses on the loss of biological diversity, effects of habitat loss, invasive species, the design and implementation of nature reserves, the use of zoos, and many other different topics of concern.  The B.S. degree will prepare students for graduate study in conservation biology and environmental policy or rewarding careers in conservation and environmental governmental and non-governmental agencies and organizations, policy and advocacy jobs, environmental consulting firms, law and publishing firms, education, and zoos and aquariums.

- Cedar Crest College Task Force announced as future goal. TASK FORCE IS OPEN TO ALL MEMBERS OF THE CEDAR CREST COLLEGE COMMUNITY, INCLUDING STUDENTS, FACULTY AND STAFF. Here is your chance to share ideas, opinions and goals to help make Cedar Crest a greener campus.

- Elaine Deutch, Amy Faivre and Rachel Edgar named LVAIC Sustainability Committee representatives.

- Focus the Nation 2008: January 31, 2008. Fun and educational activities were held, and several students stopped by to participate in a forum to voice their opinions on Cedar Crest's next steps. A small committee on Focus the Nation will be formed to fundraise and plan activities for next year. Email Rachel Edgar at rledgar@cedarcrest.edu if you would like to join.

- Fair/Trade Organic Coffee now available in The Bistro. Look for the Fair Trade Certified sticker to find FT/O coffee.

- The second Resident Advisor program on sustainability was held on Monday, October 29. Four students from the third floor of Moore Hall showed up to play conservation trivia and learn about ways they can pitch in and reduce greenhouse gas emissions on campus.

- On Wednesday, October 24 I met with the head of food services on campus to discuss a variety of issues. Our agenda included adding Fair Trade/Organic coffee and tea to the Bistro and Cafeteria, the possibility of composting food waste, creation of an herb garden for the chefs, and the use of organic and local produce. If you have any ideas or suggestions of what you'd like to see in food services, please email me with your comments.

 

 

Foodservices Information (Parkhurst):

- All milk served in the dining hall is hormone-free. Our next goal is to make all milk, including the milk served in the Bistro hormone-free and organic.

- Currently, the only free-range meat served is lamb. Please visit www.jamisonfarm.com for more information. Our next goal is to make all meat, including chicken and beef, free-range.

 

Goals:

- Develop and implement educational activities for Resident Advisor (RA) programs. These programs will include a sustainability trivia game, a talk on ways students can reduce-reuse-recycle on campus, and another fun - but educational - activity for students to enjoy.

 

- Meet with major departments on campus and discuss their plans/ideas for reducing waste. Departments include Food Services, Information Technology (IT), Maintenance, and Custodial Services.

 

- Find a professor who is interested in integrating a Greenhouse Gas (GHG) Inventory into one of their classes.

 

- Create an on-campus sustainability task force of students, faculty, staff, and administration
